ACESULFAME K


Asesulfam-K
(Acesulfame Potassium)

Deskripsi
Asesulfam-K dengan rumus kimia C4H4KNO4S atau garam kalium dari 6-methyl-1,2,3-oxathiazin-4(3H)-one-2,2-dioxide atau garam Kalium dari 3,4-dihydro-6-methyl-1,2,3-oxathiazin-4-one-2,2 di- oxide merupakan senyawa yang tidak berbau, berbentuk tepung kristal berwarna putih, mudah larut dalam air dan berasa manis dengan tingkat kemanisan relatif sebesar 200 kali tingkat kemanisan sukrosa (Gula) tetapi tidak berkalori. Kombinasi penggunaan asesulfam-K dengan asam aspartat dan natrium siklamat bersifat sinergis dalam mempertegas rasa manis gula.

Fungsi lain
Penegas cita rasa (flavor enhancer) terutama cita rasa buah.

Kajian Keamanan Produk
Beberapa kajian memperlihatkan bahwa asesulfam-K tidak dapat dicerna, bersifat non glikemik dan non kariogenik, sehingga JECFA menyatakan aman untuk dikonsumsi manusia sebagai pemanis buatan dengan ADI sebanyak 15 mg/kg berat badan.

Pengaturan
CAC mengatur maksimum penggunaan asesulfam-K pada berbagai produk pangan berkisar antara 200 sampai dengan 1.000 mg/kg produk. Sementara CFR mengatur maksimum penggunaan asesulfam-K pada berbagai produk pangan dalam GMP atau CPPB. Sedangkan FSANZ mengatur maksimum penggunaan asesulfam-K pada berbagai produk pangan berkisar antara 200 sampai dengan 3.000 mg/kg produk.
